The Eggerhof in Aldein is located at 1200 metres above sea level at the foot of the Weißhorn mountain. A sunny mountain farm on which a flock of lively free-range hens lays quality-controlled eggs. A natural idyll in South Tyrol’s high south, which inspired a chicken farmer and a chef to establish the highest-altitude pasta factory in the region. With the very highest standards of care and quality. Erich Gruber has dedicated all his passion and enthusiasm to producing high quality fresh egg pasta. Everything needed can be found naturally at 1200 metres above sea level: clean air, pure spring water & healthy free-range eggs.

We mostly use local and regional products to make our ragù and pasta sauces:
Lamb meat from val d’Ultimo and val Passiria
Beef e pork from South Tyrol
Asparagus Margarete from Terlano
Kirnig mushrooms from Aldino
Milk and cheese from South Tyrol
Speck from South Tyrol
By means of slow and careful cooking and using the high quality products, we get first-class ragù and pasta sauces.
